Tonight we were in a rush, got home late and just were not feeling the drive to make that home cooked meal. I am thinking (and knowing at least for my family) that this is somewhat of a common occurrence. Well tonight I remembered that I had recently found the Udi's Gluten Free Frozen Skillet Meals in my local grocery store!! If you do not know, I live in a very small town (which I love), that does not have many gluten free items (which I do not love..aka #thestruggleisreal). So when I went grocery shopping last week and found all this Udi's goodness I just had to purchase some to try it out AND to support my store offering this brand!!
*side note~ this option does have dairy, so for those of us dairy intolerant people beware!
Due to the dairy part I just tried a few bites (Bad I know..but I love how Udi's always tastes AND I had to try a new GF pasta for me..) and then had a delicious tuna salad for the rest of my dinner. This serves two and my family and I (just from my few bites) LOVED it!! It is extremely easy and fast to prepare and looks, smells and tastes delicious within only 11 minutes of starting to cook!
