Udi's Chicken Florentine Frozen Skillet Meal, Review

Tonight we were in a rush, got home late and just were not feeling the drive to make that home cooked meal. I am thinking (and knowing at least for my family) that this is somewhat of a common occurrence. Well tonight I remembered that I had recently found the Udi's Gluten Free Frozen Skillet Meals in my local grocery store!! If you do not know, I live in a very small town (which I love), that does not have many gluten free items (which I do not love..aka #thestruggleisreal). So when I went grocery shopping last week and found all this Udi's goodness I just had to purchase some to try it out AND to support my store offering this brand!! *side note~ this option does have dairy, so for those of us dairy intolerant people beware! Due to the dairy part I just tried a few bites (Bad I know..but I love how Udi's always tastes AND I had to try a new GF pasta for me..) and then had a delicious tuna salad for the rest of my dinner. Here We Go

Oh wow...it has been a minute! While I have been reading, cooking and gardening away with my furbabies, especially during these crazy times, I have not been up to date on my blog. I meant my absence to be short and to change platforms, but I could not find another platform that worked for me. The main reason I wanted a new platform was because I wanted my website to just be my name and not have blogger or blogspot behind it... Well color me surprised when I randomly checked my blog and saw that was now an option! As of today my blog has my proper website name and I am going to start working on it again.
