Pineapple Blueberry Crunch Cake-So easy they won't believe it!

mmmmmm  so good and SO EASY!!!

This was my first attempt at something that was not just a admittedly part of it is just a mix in the box..but that is what gave me courage to say let's go for it!!

I was watching Food Network...saw the amazing Paula Deen making this cake and was like I think I can do this (huge I know since I had watched this channel for oh YEARS without attempting a single recipe!!)

First time I made it I made it with cherries instead of blueberry b/c dad doesn't like blueberry and NO pecans (neither dad or I like does though poor lady). Second time I made it I did not have a pie filling so just used a fruit cocktail.  Third time I used blueberry pie filling and pecans as instructed...have to say it..the third time was the BEST..thought the cherry was pretty amazing as well:)  This non-pecan loving gal actually thought the pecans made the had a crisper texture on top to even out the gooey yum on the bottom!

**With the fruit cocktail, I had to cook it longer and it did not sit as well b/c more juice the filling in the pan.  Might be obvious to some, but not to me until AFTER I made it...however, it still was pretty darn good to us**

  • 3/4 cup butter, plus more for dish
  • 1 (20-ounce) can crushed pineapple, in juice
  • 1 (20-ounce) can blueberry pie filling
  • 1 (18.25-ounce) box yellow cake mix
  • 1 cup chopped pecans


Preheat oven to 350 degrees F. Butter a 13 by 9-inch casserole dish.
Melt 3/4 cup butter in saucepan over low heat.
Pour the pineapple with juice into the casserole dish and evenly spread blueberry pie filling on top. Cover with dry yellow cake mix and top with pecans. Drizzle with melted butter and bake for 35 to 45 minutes.
Beginner cook aka ME notes~ I needed more butter b/c I always have had dry cake mixture after it maybe I just haven't gotten the hang of pouring it yet?? 
Super easy right? AND whoever you cook this for is going to love it AND they will not BELIEVE how easy it was to make!!
PS~ Mom and dad liked theirs even better with a scoop of vanilla ice cream on the side!
